Here is my favorite way to eat the fish we catch in and around Trinidad. This was taken from my boy scout adventures in the 60's in Trinidad and I am not sure but think it is attributed to Florie Massarotti but I may be wrong. It was the 60's and it was a long time ago but I have always remembered this.
Take your cleaned fish...head on or off...depends on if there are girls there or not (teehee) [}:)] Anyway...On a large enough sheet of oil sprayed aluminum foil to completely double wrap the fish in; put the fish on the foil and open it up and insert one green onion white side toward the tail and tucked in, one slice of THICK bacon, one piece of asparagus...head faces the tail like the onion, A tablespoon or so of olive oil drizzled over all or butter if you desire and a little sprinkle of garlic salt and pepper. Wrap it all up in the foil by making a pouch that folds shut by little 1/2 inch folds on all 4 sides. When you have finished it will be a rectangle with 4 folded in sides. You want the fish to not be pressed in but to have room to steam inside the envelope you made. Now if camping toss it in to the hot coals for about 6-8 minutes on a side. Watch out it may leak when you flip it...open and enjoy! On the grill it takes a little longer. In the oven at 475.
