I used to buy it in the stores but couldn't afford to keep that up. I checked with the National Buffalo Assoc. on auction prices to find better pricing and got hooked up. My 2003 bull was $640 + $25 for skinning and .40 a pound for processing. It worked out to be about $1.99 per pound and I ended up with 420 pounds of everything from burger to prime rib. I had some fine eating that year. The English roasts were my favorite. Another treat was the Cheese and Jalapeño summer sausage. Now my mouth is watering for more. The sausage was pricy - next time I'll make my own.
